It really depends on what class you are and what area you're doing. I play ele (and I tend to use sab or a variation of it) So I'll usually bring another monk, 1 or 2 tanks (either 2 warr or 1 war 1 para) and the interrupt hench if there is one. If not, I may bring the necro hench that has blood ritual, or in some instances the earth hench.

I play a team of 3 heroes (MM and SS necro with a heavy interupt Mesmer). Henchies: i add to this are 2 monks and 2 ele henchies. Once the minions are up, there's no way to stop this.

I'm a ranger so i just leech along and keep them company

My hench/hero usually goes like this, regardless of area.

me (dragon slash adrenaline)
olias (curses)
general morgan (motivation)
Talkora mo/e (prot)

henchmen
2 monks
1 warrior
ele (i pick element depending on area, like fire for a winter-y location)

I hear alot of ppl bitch and complain about 3 monks... But I kill just fine and dont die. Olias also has spinal shivers and i have a cold sword if I get into any Super monk boss healing where I would be unable to kill it.

lets see
me (if I am an ele then I change out sosuke for my channeling rit)
nuker (sosuke)
mm (olias)
monk (dunky)

henchies
monk (usually menlo)
tank (nf-dervish, fac-talon or lucas)

others change...in factions I like to bring the kurzick dom guy, and a rit
in nightfall I like the paragon and either herta or the mesmer.

sometimes I dont use olias since many areas are not mm friendly, and some of the quests/missions in nf require a hero I dont normally use.

For me as an assassin I tend to bring:
1 healer
1 protter
1 MM or fire ele (depends if MM is really needed)
and for the rest I bring healer hench, blood hench, interrupt hench and mage hench(preferably fire)

usually, when I bring henchmen, I bring warriors, rangers, or dervish, because I leave the damage to the heroes and I want henchmen with high AL, and Charge is always good too..

That leaves room for adding Lo Sha/Erys Vasburg/whoever else gives good party support for the area. I usually also try to bring Herta or Kai Ying if they're available, and possibly Cynn. Lukas is also a solid choice for his shouts.

Personally I generally try for the following combination regardless of the build in question: two melee, one healer, one prot, one MM, and the rest "depends on the situation".

Sabs necro build already had the healer, MM, and one of the "other" built into it. As such I pretty much always try for a prot monk (VERY useful) and the two melee as a core. After that, excepting a few areas/missions, I have found it mostly irrelevant which ones I pick. In areas that I take more damage I go for an earth ele, in other areas I tend to go towards damage (fire ele or the rangers) and in a few places where I find I need more healing (rarely) I take another monk.

However, IMO the core of Sabs build is the two tanks/melee, healer, MM, and the SS necro. All others are mostly icing on the cake, not the cake

Me (Godmode Warrior)
Heroes: Either Sab's 3 Necromancers (I'm refusing to call it Sabway) or Racthoh's 2 Paras + Dervish thing
Henchies depend on what I'm doing, if I'm in HM, I'll take a melee, a fire, and 2 monk henchies (just to be sure). In NM I'll drop a monk henchie, possibly both if low end, and thow in another damage dealer.
